TIME TO LEARN
There is no use for a traditional winemaker in the Port and Douro high quality wines business, for these wines is not about the art of winemaking, but also the art of tasting , blending and about much more. The modern producer/taster/blender must be an expert on theory,but he must also be extrovert, for first he has to prepare and makes his wines and then he needs to help sell it. The producers need to be present in the field : modern philosophy says that without viticulture there would be no viniculture at all.In the tasting room: whilst the Port maturates, and before and after mixing, samples are extracted at regular intervals, which are stacked meticulously in small glasses and bottles in the tasting room. In the cellar : the producer knows every drop in the cellar and knows what to do with each wine. At the wine fairs and tastings: today, the producers/blender's function continues into the sales outlets, for the great Port-drinking world would rather see the oenologists here than sales personnel and representatives.
